                                                 Oats Roti
Ingredients:

  • Oats powder-2cups.
  • Chopped tomatoes-1cup.
  • Chopped onions-1cup.
  • Grated Carrots-1cup.
  • Chopped green mirchi-3.
  • Methi leaves-2tsp.
  • Coriander leaves-1/2cup.
  • Red chilli powder-1/2tsp.
  • Turmeric powder-pinch.
  • Garam masala-1/4tsp.
  • Salt-To taste.
  • Oil-For frying rotis.
  • Coriander leaves-Few.
Method:
  • Make fine powder of oats in a mixer without adding water.
  • Transer it to a bowl.
  • To this add chopped tomatoes,chopped onions,grated carrot,chopped green mirchi,methi leaves,coriander leaves,curry leaves,red chilli powder,turmeric powder,garam masala and salt.Do not add oil.
  • Add required amount of water and knead the dough.
  • Let it sit for 30 minutes.
  • Divide the dough into equal portions.Make balls.
  • Take a plastic paper.apply oil to that.
  • Place the dough and flatten it to required thickness by applying oil to your hand or dipping your hand in water.
  • Heat Chapathi tawa on stove.
  • Place the roti gently,roast it on both sides by adding little oil.
  • Now the rotis are ready to serve.
  • Serve hot with tomato chutney/tomato sauce.

                                                          BUTTER NAAN
Ingredients:
  • All purpose flour/Maida-1/2kg.
  • Bread slices-200gms.
  • Salt-to taste.
  • Butter.
Method:
  • Take a bowl.
  • Add the ingredients.(Maida,bread,salt).
  • Before adding bread,remove the brown edges.
  • Knead it with enough milk until you get a very soft dough.Then cover it with a lid or damp cloth.
  • Let it ferment overnight.
Note:It will be very sticky initially.But by continuous kneading it will become non sticky.Even though if is   sticky add little flour and knead it again.

Preparation:

  • Knead the dough and divide into small portions.Make balls and flatten it.
  • Roll each portion into triangle shape.Don't make it too thin.
  • Heat an iron griddle.Transfer the naan onto the griddle.
  • Brush the naan with butter.(Apply butter to the both sides).
  • Cook it until brownish spots appear.
  • Serve hot with chana curry.

                                               PAPER DOSA


Ingredients:
  • Urad dal-1 cup.
  • Raw rice-2 cups.
  • Chana dal-1tbsp.
  • Salt-To taste.
  • Oil-For cooking.
Method:


  • Wash and soak urad dal,chana dal and  raw rice for about 4-6hours.
  • Drain it and add salt,.
  • Grind it with enough water to get a smooth batter.
  • Transfer the batter to a big vessel and allow it to ferment  overnight.Next day you can prepare dosas.
  • Heat a non-stick tava.
  • Grease it lightly with oil.When it is hot,pour a spoon/laddle full of batter and spread it thoroughly to make a  paper thin dosa.
  • Cook on one side ,pouring a little oil along the edges.
  • When it is crisp,make a roll and serve hot with chutney or sambhar or aloo masala.

                              SABUDHANA/SAGGUBIYYAM/SAGO  KICHIDI

    Ingredients:
    • Saggubiyyam/Sago-300gms.
    • Chopped Aloo-1 big size.
    • Chopped Tomato-1 Big size.
    • Chopped Onion-1 big size.
    • Chopped Carrot-2.
    • Roasted Peanut powder-2tbsp.
    • Mustard seeds-1/4tsp.
    • Jeera-1/4tsp.
    • Chopped Green chilli.-4.
    • Curry leaves-Few.
    • Coriander leaves-For garnishing.

      Method:

      • Wash the sago thoroughly.Drain off the water completely.Let it stand  overnight.
      • Before cooking, make sure that the sago should be softened.Check the sago by pressing between thumb and forefinger.If the center is still hard sprinkle little amount of water and keep it aside for sometime.
      • Heat oil in a pan.Add mustard seeds.Let it splutter. Then add jeera,curry leaves.
      • Add chopped green chilli .Saute for a minute.
      • Add chopped onions.Cook it for 5minutes.
      • Add chopped vegetables,close the lid and cook for 10minutes.
      • Once they are cooked, add sago.
      • After adding sago don't close the lid.
      • Add peanut powder,salt.
      • Combine it and saute it fot 8-10minutes.
      • Garnish with coriander leaves.
      • Serve hot.
